Fresh Garlic Rosemary Chicken Pizza Recipe


Hello sweet ladies, 

I made up a new pizza this morning. I talked to our boss about wanting to do a rosemary chicken, he had a little twist to it by adding a small amount of fresh squeezed lemon juice. It was a hit with the kids.....it will stay on the menu from now on. I wanted to share it with! 


Fresh Garlic Rosemary Chicken Pizza

You will need a recipe for two pizza doughs or store bought.

First I took the 2 chicken breasts and put them in a glass cooking pan. I poured olive oil over the top of the uncooked chicken.  I minced some fresh garlic about 4 cloves and spread that over the chicken. I chopped up 2 sprigs of fresh rosemary,  2 tbl. of parsley and 2 tbl. of chives. Take out 1 tbl. of the rosemary and press 1/2 of it on the top of each chicken. Set the remaining herbs aside to sprinkle on the top of pizza. Bake chicken in a 350 degree oven for about 15 or 20 minutes. After you have taken the chicken out cut or rip it up in bite size pieces. Make sure that you mix the olive oil, minced garlic and rosemary with the cut up chicken. You will use one cut up chicken breast per pizza.

You will need a package each of 
mozzarella cheese, 
provolone and 
fresh grated parmesan cheese. 

I will give the recipe in the order of how I put the ingredients on my pizza dough. 

Instructions,
Sprinkle mozzarella cheese on top of pizza dough.
Rip up enough provolone to cover the top of mozzarella. 
Spread out the marinated chicken pieces on top of the provolone.
Next, sprinkle some parmesan cheese on.
Sprinkle remaining rosemary, parsley and chives as you like.

I also sprinkle a little garlic powder on the top.....just adds a little bit more flavor.

Bake at 425 degrees for 18 minutes or until done.

The snow is about gone.......but very very cold today. It will  be warming up a bit this weekend and next week. Will be a nice break!

Snow!

Hello sweet ladies, 


Last night it started snowing in the early evening. I so wanted to take a pic so I grabbed my pic and out the door I went. When I turned on my camera  it wouldn't work. So bummed, that I couldn't take a pic of it. The flakes were huge and coming down all over our farm. So pretty! The Girlies were running all around enjoying their time in the snow. It didn't last long, but the weather man was saying we were going to get some more over the night.

When we woke it was very dark out and very early in the morning.....like 5. I walked out the door and one inch of snow was everywhere. I was sad that we were not going to be able to see what the farm looked like in the day light. Snow always makes everything look so clean when it is new. 


At the college where our family works..... on the south side of the cafeteria...... there are a lot of windows that I get to look out of all day long. As I was prepping food for the pizzas.......the sun started to come up. The college was gorgeous!!!!!! There are hundreds of trees on campus and they were loaded down with lots of very wet beautiful snow! It was truly a winter wonderland! I was grateful that I could enjoy seeing the beauty!


I went outside on our break to take a few pic's. 


The kids started coming in for breakfast all bundled up. So many are from southern states where there is no snow.....they were all enjoying it. 

Just thought you might enjoy seeing the snow, if you haven't had any.

Another Weeknight Dinners Review! Have a Blessed SONday!

Hello Sweet ladies, 

Trust your SONday will be a blessed one for you and yours!!!!!! We will be having 10 college kids at our table after church.... eating with us. God is growing our family. We as a family are humbled as He places the ones He wants in our Home! "In our blessing jar!"

There is one more day for the sign up for the Gooseberry Patch and Prairie Flower Farm Party! I have one more recipe for you to try. A fast easy and nummy bread...... you must try this one. Your family would so like!!!!!!! It has a bit of a different twist to it because of the creamy italian salad dressing, but it is so good with every bite! I made this at the college last week......we are making it again today for the college kids.......I made 4 loaves of homemade french bread. 


Bubbly Cheese Garlic Bread

"My children love this delicious bread! All ingredients can be adjusted to your taste.....use a mixture of all three cheeses, if you like."

1/2 c. butter, softened
1 to 2 cloves garlic, crushed
1/2 to 1 c. creamy Italian salad dressing
1 loaf Italian bread, halved lengthwise
 2 c. shredded Cheddar, mozzarella or Monterey Jack cheese
 2 t. dried parsley

Blend butter, garlic and salad dressing together in a small bowl. Place bread on a baking sheet, cut-side up. Spread butter mixture over both halves. Top with shredded cheese and parsley ( I used fresh). Bake, uncovered, at 375 degrees for 10 to 20 minutes, until cheese is melted and bubbly. Slice each half into 8 pieces; serve warm. Makes 16 servings.

I have grandkids in my life. I have wanted to start recipe boxes for each of them.....this idea will be a sweet idea to start now! Then each one would have their own box. I need to think of my big kids at the same time! Nothing like having hand written recipes written in my handwriting. I have some that my sister had asked our Grandma's to write up for me for one of my birthday presents. They are treasures!!!!!!

Another Gooseberry Patch Weeknight Dinner Recipe!!!!!

Hello sweet ladies, 

It is so cold here.......18 when we woke up and 28 later in the day! Even the kitchen at the college wouldn't warm up.....that means it was major cold outside. I about froze doing the chores........tonight it was so cold! 



Look who was in one of the chicken nesting boxes. This is Woody she is a girl......our littlest grandson named her. It works for us!!!!! She was so cuddled and warm 

I just have to show you what happened when we were coming home after work. 



There is a field that is not far from our farm and it was full of Snow and Canadian (Canada) geese. I had to share the beauty!!!!!!!


Amazing when more geese flew in to eat at the same field!!!!!! In the hundreds....like maybe 500 - 800 my sweet man thought. A gift......into the Blessing Jar! They were so beautiful!

Time for another Gooseberry Patch Review!!!!!!

I told you that I would give you the Pesto Chicken Pizza recipe ......so easy and very nummy and the kids loved it at the college!!!!!!! 



Pesto Chicken Pizza

This is my kids' favorite pizza and their friends love it too. Cut into small squares, it makes a great appetizer. Feel free to add the chicken or not...we like the pizza just as well without it.

12-inch unbaked pizza crust
8- oz. jar pesto sauce
1 c. grilled chicken, chopped
1 c. shredded Italian-blen cheese
1 c. gouda cheese, shredded

Place crust on an ungreased baking sheet; prebake, if specified by package directions. Spread desired amount of pesto sauce over crust. Sprinkle chicken over pesto; top with cheeses. Bake at 400 degrees for about 10 minutes, until crust is golden and cheese is bubbly. Makes 4 to 6 servings. 


I made it for the college kids......so I had to adapt it a little. I spread the pesto onto the top of the pizza dough. Then I sprinkled it with chicken.



Then I topped with all the different cheeses. That easy......into the pizza oven........the kids loved it!!!!!!!! 

We will be making it at our home as well. It is very very good!

Another Review.....Chicken Tortilla Soup Recipe!



Hello sweet ladies........hope all is well at your home! Things are good here. Cleaned out the Milk House....... the weather was wonderful tonight. You can't believe how beautiful the sky was. I ran out to take a pic and this is exactly what the sky looked like. I love what the Lord does at night here on the farm! I am so blessed! Know you probably are where you live also! 


This last Sunday we had a house full of college kids and family after church. The girls and I were wanting to make up soup to serve. I looked in the Gooseberry Patch Weeknight Dinners and there was a Chicken Tortilla Soup! Perfect to try out on our friends and family!!!!!! We also thought we would have Chili to go with. Guess what soup won? It was wonderful! The Chicken Tortilla Soup!!!!!! One of the boys from the college had 5 bowls full! I am not kidding. It was so funny because he would say, "do you mind if I have another bowl full"? He really liked it!

Talk about a "wow soup? I've often made this slow-cooker soup for easy weeknight meals and tailgating parties too. The compliments are sky-high, even though it's the easiest meal to prepare.

Chicken Tortilla Soup
4 boneless, skinless chicken breasts
2 15-oz. cans Mexican-style stewed tomatoes
4-oz. can chopped green chiles
2 15 oz. cans black beans
15-. can tomato sauce
1 c. salsa
tortilla chips
Garnish: shredded Cheddar cheese

Place chicken in a slow cooker. In a bowl, mix undrained tomatoes, chiles and beans. Stir in sauce and salsa; spoon over chicken. Cover and cook on low setting for 8 hours. Just before serving, remove chicken and cut into bite-sized pieces; stir back into mixture in slow cooker. To serve, line soup bowls with tortilla ships. Ladle soup over chips and top with cheese. Serve 6 to 8. 

We served cornbread muffins with the soups and sour cream for the top.

 As I said I worked in the Milk House tonight taking 3 wheelbarrows full of straw to the garden. We will work it in come spring........will be great for the plants! I was having problems with the girls scratching out the straw so I worked on the nester and laid new straw down for all the Cochins. 


Sweet Pea immediately got all snuggled in to lay her egg.

Weeknight Dinners......Dinnertime Nachos Recipe!!!

I have another 


for you!!!!!


Tonight I used my new 

Gooseberry Patch Weeknight Dinners Cookbook. 

Since it was Tuesday I went to the Tuesday is Tex-Mex Night section. I had all the ingredients on hand for the Dinnertime Nachos.  I tried them out on my family. It was fast and easy.....nice after being at the cafeteria cooking all day. Here is the recipe.

Dinnertime Nachos

This simple recipe pleases even the fussiest eaters. You can add your favorite toppings to make it special. Try adding some smoky-flaved BBQ sauce to the taco meat.....yum!

1 lb. lean ground beef
1- 1/4 oz. pkag. taco seasoning mix
1- 1/2 c. skim milk
2 T. all-purpose flour
1- 1/2 to 2 c. shredded Cheddar-Jack cheese
6 oz. pkg. tortilla chips
Garnich: Shredded lettuce, chopped tomatoes
Optional: sour cream



Brown beef in a skillet over medium heat. Drain; stir in taco seasoning and cover to keep warm. 


In a separate saucepan over medium heat, combine milk and flour; 


Whisk well. Cook and stir over medium heat until mixture thickens and comes to a slow boil. Remove from heat. When I took the pic I didn't realize that my little egg guy whip was in the corner hanging upside down! Had to laugh! Hope it did the same for you! 


Add cheese to milk mixture: stir until cheese is melted. Layer 5 dinner plates with tortilla chips. Top with cheese sauce, beef mixture, lettuce, tomatoes and a dollop of sour cream, if desired. Makes 4 servings. 

My sweet man loves salsa on anything Mexican. I added it to the top of the tomatoes before I dolloped with the sour cream. He liked!

Earlier this evening I was walking out to the different coops to check on the eggs and passed my light blue Mr. Cochin Rooster. He was one of my babies last year........ I think he is so pretty!!!!!!! Click on pic to see him better, if you like.


I went on to gather the eggs.....the girls were sitting and some had already laid me some eggs. 24 eggs total by the end of the day. The girls are finally kicking in on laying eggs for me! LOVE IT! 

I am still adding blessings to my blessing jar. Yesterday morning we arrived at work and there were hundreds of snow geese and Canadian geese flying over us! Now that was a sight and a blessing!!!!!! Added it to my jar!!!!!! Have any of you started one yet......it is so worth it!

My wet "Little Chicky Girl"!

Good morning!!!!!! I have to show you my poor Little Chicky Girl! Yesterday I was out doing chores. I started by taking warm water down to the younger chicks (3 month old) and the teenage chickens (5 month old). I had them all fed and watered and went back to the farmhouse to get more for the Cochins......I went to fill their enamel pot full and it had been tipped over. I went to tip it back and out came my poor "Little Cuckoo Maran Cochin Girl"!!!!! Scared me half to death!!!!!!! She was soakin' wet and cold! I picked her up and ran to the house. I put her in a towel and started rubbing her down to get most of the moisture off her. I had her sitting on a towel at a little breakfast table by the north kitchen window ("north kitchen" is or our family that reads my blog : <). I went to get the blowdryer and she hopped up on the ledge. I just let her sit there while I started to blow her dry. I wish I would have had two hands so I could show you how she enjoyed her new hairdo job! It was way to cold outside so I have this old stool by my computer desk. I let her sit by me on a towel in front of a heater so she could get dry......yes, she was a lady and just stayed there and didn't get off. She would stand on one leg.....then switch to the other leg....closed her eyes.......she was getting to think that she was going to be a "House Chick". Loved the evening with my girl!!!! One of our college kids came out.....his mouth dropped opened......made me smile!

Gooseberry Patch and Prairie Flower Farm Party!

Hello sweet ladies! 

Well.......I have been waiting for some time to show you another one of the new Gooseberry Patch Cookbooks! It is time for another. 


I can't wait to tell you about the cookbook.......you are going to like it.... a lot!!!! It is so easy to use. Weeknight Dinners has enough meals for the whole week! Most of the sections have at least 40 recipes in each. Plus all the sweet little illustrations at the bottom.....it never disappoints me with the helpful hints!!!!

As many of you know I always like to add a little something else with the cookbook to go with the party. I made up this sign that reads, "May all who enter as guests leave as friends". It says exactly what I feel every time I open up a new Gooseberry Patch Cookbook......go here if you would like to see what they have available! 

When I opened up the Weekday Dinners, the part I liked the most was all the interesting new recipes! It is broken up for every day of the week. That makes life a little simpler..... makes it easy to plan your weekly meals also. Each section has at least 40 easy recipes to choose from. You could even let the children help pick out a meal for each day of the week. Then write it on your calendar! Would make a Momma's life much easier!

Since I serve at a college.... in the pizza area, I looked in the cookbook to see if there was any thing I could try on all the kids at the college! I  found one called Grandma's Sicilian Pizza submitted by Nancy Julian Alamogordo, NM. I made it up and the kids loved it! Here is the recipe.


Grandma's Sicilian Pizza.

14-1/2 oz. can stewed tomatoes
2 t. garlic, chopped
1 t. dried oregano
1 t. dried basil
2 c. shredded pizza-blend cheese
Garnish: chopped salami, olives, onions, green peppers, green chilies, other toppings 
I used fresh grated parmesan on the top of the pizza. 

Prepare Pizza Dough; let rise while preparing the sauce. In a saucepan over medium heat, combine undrained tomatoes, garlic and herbs. Bring to boil; cook about 15 minutes, breaking up tomatoes with a spoon. Place Pizza Dough in the center of a greased 15:x10" jelly-roll pan; spread dough out to edges of pan. Spread sauce over dough; add cheese and desired toppings. Bake at 425 degrees for 30 to 40 minutes, until edges are lightly golden. Serves 4 to 6.

Pizza Dough:
1-1/3 c. warm water
1 env. active dry yeast
4 c. all-purpose flour
2 T. olive oil
1 t. salt

Heat water until very warm, about 110 to 115 degrees: pour into a large bowl. Add yeast; stir until dissolved. Add flour, olive oil and salt; mix well and let rise about 15 minutes. 


Spread sauce over top of dough. Sprinkle cheese on top of sauce.


Add toppings. I sprinkled grated parmesan cheese on the top. Pure Nummmmmnest! 
There is another Pesto Chicken Pizza, that I will try this next Wednesday, found in the Wednesday is Italian Night section! 


Many of you already feel like Gooseberry Patch is a part of your family. They have been a part of mine for a long time.....loved their catalogs and would never throw one away...ever!!!! If you would ask me how I feel about them.... it would be that they provide in many homes across the world......"HOSPITALITY"! After each cookbook is bought and used in each Home......hospitality just happens naturally! For women that is a sweet thing! Nothing like loving on your family or bringing people inside your home to encourage and bless them. That is happening today. We are having 5 baseball players for dinner. Asked them to church and dinner afterwards. I made up a huge pot of Chicken Tortilla Soup from the Tuesday is Tex-Mex Night section! Oh my is it nummy! I will share the recipe with this next week!  It is so so easy to make up!
