My sweet man, Tressa and I eat a lot of fresh fruit and veggies during the summer. It gets so hot here in Kansas and we like to eat lite. We find ourselves farming, gardening and canning and don't feel like much heavy food during the day. This recipe will be a favorite for us from now on! You must try it!
Sweet Fruit Salsa
was going to be a new favorite for summer.......
we just knew it!!!!!!! So when I was skimming through
Good-for-Upi Everyday Meals, I knew I had to try this recipe!
When you read the recipe you will see why it is soooo good!!!!!!
You are going to need: a pt. of strawberries,
1 green apple and 1 mango....
2 T. orange marmalade, 1 t. ground ginger and 1 t. dried mint
Another substitution is 2 T. apricot preserves (or any other kind of jam you might have on hand) and drop the ginger and mint.
Here is the nummy recipe!
Sweet Fruit Salsa
1 pt. strawberries, hulled and finely diced
1 green apple, cored and finely diced
1 mango, peeled, cored and finely diced
2 T. orange marmalade
1 sp. ground ginger
1 t. dried mint
Combine all ingredients in a serving bowl; mix gently. Cover and keep chilled up to 3 days. Makes 8 servings, or about 4 cups.
Isn't that so easy? It takes a little time to cut the fruit, but it is so good and soooo worth the cutting!
The recipe said to eat the salsa with cinnamon pita chips. I didn't have any pita...... so I used some flour tortillas and made my own chips.
Baked Flour Tortillas
5 large flour tortillas
5 T. melted butter
2 T. cinnamon sugar
Cut tortillas into 3" pieces. Lay squares on a cookie sheet. Brush melted butter on one side of square. Sprinkle squares with cinnamon sugar.
Bake in a preheated oven at 350 for 8 to 10 minutes.
Allow to cool approximately 15 minutes. Serve with
chilled fruit mixture.
