My sweet man, Tressa and I eat a lot of fresh fruit and veggies during the summer. It gets so hot here in Kansas and we like to eat lite. We find ourselves farming, gardening and canning and don't feel like much heavy food during the day. This recipe will be a favorite for us from now on! You must try it!
Sweet Fruit Salsa
was going to be a new favorite for summer.......
we just knew it!!!!!!! So when I was skimming through
Good-for-Upi Everyday Meals, I knew I had to try this recipe!

When you read the recipe you will see why it is soooo good!!!!!!
You are going to need: a pt. of strawberries,
1 green apple and 1 mango....
2 T. orange marmalade, 1 t. ground ginger and 1 t. dried mint
Another substitution is 2 T. apricot preserves (or any other kind of jam you might have on hand) and drop the ginger and mint.

Here is the nummy recipe!
Sweet Fruit Salsa
1 pt. strawberries, hulled and finely diced
1 green apple, cored and finely diced
1 mango, peeled, cored and finely diced
2 T. orange marmalade
1 sp. ground ginger
1 t. dried mint
Combine all ingredients in a serving bowl; mix gently. Cover and keep chilled up to 3 days. Makes 8 servings, or about 4 cups.
Isn't that so easy? It takes a little time to cut the fruit, but it is so good and soooo worth the cutting!
The recipe said to eat the salsa with cinnamon pita chips. I didn't have any pita...... so I used some flour tortillas and made my own chips.
Baked Flour Tortillas
5 large flour tortillas
5 T. melted butter
2 T. cinnamon sugar
Cut tortillas into 3" pieces. Lay squares on a cookie sheet. Brush melted butter on one side of square. Sprinkle squares with cinnamon sugar.
Bake in a preheated oven at 350 for 8 to 10 minutes.
Allow to cool approximately 15 minutes. Serve with
chilled fruit mixture.

I love having the family over for a bbq. Anytime the family is together is a good time. Food? Usually vegetarian fare, since most don't eat meat and so, a veggie chili is a great dish.

ReplyDeletequick sandwich or wrap filling, easy fried rice prepared ahead, cooked rice mixed with , onions and green peppers chopped and sauteed in a little butter, teased with lite soy sauce, keeps for several days in the fridge, you can add bits of chicken breast or my husbands favorite polish sausage pieces. pile it on or roll it up add some shredded cheddar, mmmm
We like to grill in the summer-ribs are our favorite!

DeleteThe fruit salsa does look yummy. The strawberries are late here this year, but we hope to pick a bunch of them in a couple of weeks. We eat a lot of salads too, all different types of main-dish salads.
ReplyDeleteMy summer is looking really busy this year. I am spending a lot of time with my elderly dad and so I am making use of the time by decluttering his house (mostly the storage areas, not things he is actually using). So I may not have a lot of extra time to do summer activities.
One of my favorite things about summer is that my hubby and I can just pack up our supper and picnic by a lake or pond. I also love it when we can have our morning devotions by a campfire on a Saturday morning, and I love having my quiet time on the porch or patio. Summer is so short here, we try to make the most of every moment.
I like to make pasta salads in the summer and there is nothing like eating the first ripe peach of the season and have it run down your chin. I also like eating homemade peach ice cream.

DeleteMy favorite thing to do in the summer is enjoy the outdoors! It can get a little hot, but it is so nice to have picnics and enjoy the lake!

In our garden we have an amazing rhubarb patch. I have a recipe called Rhubarb Dump Cake which only takes about 10 minutes to put together and 45 minutes to bake. It's my summer go-to dessert/snack recipe for after meals or when company drops in. It's wonderfully adaptable in that almost every ingredient can be substituted for what's on hand and it's deliciously fruity and summery tasting. ReplyDeleteOur family and I love to eat fresh veggies, too! Homegrown fresh string beans, fresh tomatoes and cukes, and corn on the cob = a little bit of heaven on earth... besides the strawberry shortcake, etc... and fresh peaches.... Mmmm!
Your Fruit salsa sounds yummy! I think I would use the Apricot jam. I love that! =)

It is hot here in northern California during the summer. I try to prepare dinners that do not require cooking. I have several wrap recipes that use different meats or beans as filler. We also like to eat main dish salads.

In the summer I love to make squash dishes. All kinds! And we love to swim and sit outside and enjoy the warmth.
