ONE MORE DAY!!!!!!!!!!!!! I just love HOME!

Hello Sweetie Ladies,

This is going to be real fast post! I have this wonderful recipe for you to try. My Tressy made them for the kids at the college yesterday right before we left. We didn't try them until today........... oh my they are the nummiest cookie bars. Now you have to use butter, it is a must! I always use butter........it tastes soooooo much better. They really are soooooooo nummy!

The recipe is called Cream Cheese Lemon Bars. Tressa kind of made up the recipe. I know that I told you it was good.............it was really good!



Cream Cheese Lemon Bars
1 1/2 cups unbleached flour
2/3 cup confectioners' sugar
3/4 cup butter

12 ounce of cream cheese
1 1/2 cup of confectioners sugar

3 eggs 1 1/2 cup white sugar
3 T. unbleached flour
1/4 cup lemon juice

1/3 cup confectioners' sugar for dusting the top

Preheat the oven to 375 degrees. Grease a 9x13 inch baking pan using butter
.
Combine the flour, 2/3 cup confectioners' sugar, and butter. Pat dough into prepared pan.
Bake for 20 minutes in the preheated oven, until slightly golden. While the crust is baking, whisk together eggs, white sugar, flour, and lemon juice until frothy. Set aside

Cream the cream cheese and powdered sugar.

After the crust has cooled, spread cream cheese mixture over the top of crust. Pour lemon mixture over the top of the cream cheese mixture.

Return to the preheated oven for an additional 20 to 25 minutes, or until light golden brown. Cool on a wire rack. Dust the top with powdered sugar.
Makes 36.

A really funny.........today..... Mr. Phil was helping make twice baked potatoes. The guy that he helps put the pans in the oven. There is two ovens one right on top of the other. The man filled the top oven and then put only one tray in the bottom oven................I went to put in a pan of rolls about and hour later..........after it had been in there for 3 hours...............you guessed it! Black potato. The guy brought it out for lunch.........sat next to Phil.............we laughed so hard when Mr. Phil saw the blakened potato. Made for a funny day!

So do I.......... just not as much as HE does.

    It's Friday. Soon you and I both will be back on the farm for two whole days. And boy do I have a lot to do. I would love to have a milk cow but that may have to wait a little longer. The last two mornings when I woke up, I thought about closing my eyes for 10 more minutes. Then my brain yelled, you have to get the milking done and I sprang out of bed. Maybe my subconscious is getting me ready.

    Yummm, just think of all that fresh butter and cream cheese to make Cream Cheese Lemon Bars!!!

  4. My dear Linda..those bars look so nummy..maybe I will make them for Auntie Pearl tomorrow. We will be sharing dinner with her at the nursing home tomorrow. I think she would really like them! Everything you make always looks 'oh so good'! Our zucchinnie pie was okay that we made Wed. for potluck, but I felt it was missingsomething.

  5. I am not much of a cook and I am trying your lemon bars but have a question. When you take the crust out of the oven and pour on the egg mixture does it cool and harden enough to spread the cream cheese mixture on? Help for the amature cook!!

  6. Uhhhhhhh no WONDER they're good!?! I know you'll enjoy your weekend. G & I are hoping the rain holds off enough to go on a housewalk today. It is in an old & historic neighborhood in nearby town. If it rains we'll have to squeeze it in tomorrow between church and Small Group in the evening.

    I'm making Frozen Pumpkin Desesrt for Small Group. Can't wait to taste it!
