Lemon Cream Bar Recipe and A Little Party Going On!!!

Hello Sweet Ladies!!!!!!!!

Thank you to all who left comments!!!!!! So sweet of you and it made my time being home all the sweeter!!!!! Our day was truly amazing. We (the girls) did better then we thought. At first we were a little teary.......it is always a little bit hard when you would rather be home, but we heard the sermon yesterday.....and the Lord had made it clear to us...... that He was with us. When we got to the cafe we were going to smile! We have to dress kind of funny, but we were not going to complain. Our boss finally let us all be able to wear tees in the kitchen and only the jackets out in public. Thank you JESUS! God was so precious, I know He heard you all praying, in fact some of the prayers that were emailed to me and left on my post... I knew He had His hand on us by what you had specifically prayed!!!!!!!!! The other thing that happened was we were so busy that it made the day go so fast and before we knew it, it was time to leave for home!

I just have to say you are soooooo PRECIOUS! Thank you for loving my family so!


As many of you know we made Lemon Cream Bars at the bakery today (I put it up on fb on our break and said I would put it up if anyone would want it). It is one of the kids favorite recipes, so that was on the menu!!!!!

Lemon Cream Bars
1 1/2 cups unbleached flour
2/3 c. confectioners sugar
3/4 c. butter

12 ounce of cream cheese
1 1/2 c. of confectioners sugar 

3 eggs 
1 1/2 cup white sugar
3 T. unbleached flour
1/4 c. lemon juice (we use fresh squeezed)
1 T. lemon zest

1/3 cup confectioners' sugar for dusting the top

Preheat the oven to 375 degrees. Grease a 9x13 inch baking pan using butter.

Combine the flour, 2/3 cup confectioners' sugar, and butter. Pat dough into prepared pan. 
Bake for 20 minutes in the preheated oven, until slightly golden. 

While the crust is baking, whisk together eggs, white sugar, flour and lemon juice until frothy. Set aside.

Cream the cream cheese and powdered sugar.

After the crust has cooled, spread cream cheese mixture over the top of crust. Pour lemon mixture over the top of the cream cheese mixture. 

Return to the preheated oven for an additional 20 to 25 minutes or until light golden brown. Cool on a wire rack. Dust the top with powdered sugar. Makes 36. 


We are also going to start making all the pizza dough. It was not hard at all and amazing to watch the dough rise. This picture does not look as big as it really was. It had 84 cups of flour.......so that gives you an idea. It just kept rising and rising! I enjoyed working with the dough. It started about 3' long when we put it on our work station. Thought you would like to see. 

Okay..... on my fb I said I would have a little surprise tonight. It is just for some fun as I start serving again at the college. 


As you know from my blog my sweet man and I have been picking Sandhill Plums everynight. They are so beautiful and big. It is so peaceful as we pick. Tons of birds are singing away in the cool of the evening. From the time I was little, picking any kind of berry is a favorite thing for me to do!!!!!! I also enjoy canning jams and jellies for CHRISTmas gifts. My kitchen is getting full of boxes that are just waiting for me to make up some jelly. I thought it would be fun to have a little party and one of you could win a 1/2 pint jar of Sandhill Plum Jelly. It really is the nummiest! 


Okay, I haven't made it yet, but I will one of these nights and will fill this little jar full of beautiful red sandhill plum jelly for one who signs up.

    Now, those lemon bars look YUMMY!! And that 84 cup of flour pizza dough, well I just can't imagine your petite little self working with that. LOL!!

  3. I just love the jam I make from ripe tomatoes and raspberry jello. Tastes like Raspberry jam. I have never eaten plum jam but you make it sound delicious....God Bless you!

  7. Linda, bless you for being so positive while going through this time in your life. I know sometimes life can be hard...but we are so blessed to be living it..smile... This recipe looks so amazing thank you so much for sharing it with us! Yummm...

    Oh how I'd love to win that jar of jelly.. We really enjoy jelly...My favorite is Strawberry or rhubarb or strawberry/rhubarb jelly. My Tom likes Raspberry jelly!

    My very favourite jelly is purple grape and my very favourite jam is strawberry. We have a local Farmer's Market in our little town and many people sell their homemade jellies & jams there. A favourite trick is adding a touch of locally grown jalapeno peppers to some of the preserves for a nice little bite. It tastes wonderful on breakfast toast or hot biscuits and is also great on snack crackers with a touch of cream cheese. You might want to try it some time. Here's hoping I'm blessed enough to win that beautiful little jar of your homemade jelly. Mmmm-mmm :)

  10. My favorite jelly was the choke cherry that my Grandma made when she went to the mountains and stayed with a friend. They were widows and most likely picked the cherries, too. No bear scares way back then in the late 50's and 60's!! Now I like crab apple jelly, but no one seems to make it anymore.♥♫

  17. Vote #1: I am kind of different because I would rather have some honey on buttered toast and don't really eat jam or jelly anymore. I would love trying your Sandhill Plum jelly though!   20. Good Morning Linda! Just read your post and will be praying for you today and this week as you readjust. God will use you and the girls to do great things there at the college. Our college kids need to have sweet Godly smiles and words to encourage them during this time of their life. My favorite jelly is strawberry because we go as a family to pick! Luv! We have just about gone through our jars for this year, must pick more next year!

  21. Happy Anniversary! Our 30th is in 3 weeks! My favorite jelly is homemade strawberry. My children had a book called The Mother's Day Mice when they were small and there is a quote from the book we always say when eating our jam, "Strawberries taste of summer coming." Blessings, Angela

  22. Honestly, I dno't do a lot of jammin'....but I do have a new favorite spinach salad dressing that uses 3 T. apple juice and 2 T. each of balsamic vinegar and strawberry preserves! So I guess my current fav. is strawberry preserves :)

    Bring on that Sandhill Plum Jelly!

  24. Any kind of jam is good, and sandhill plum jelly sounds amazing! I have had beach plum jelly before; maybe they are similar kinds of plums. One of my favorites from years gone by was when an aunt made pineapple and apricot jam (with a few cherries) for Christmas gifts. I've always wanted to make some; maybe this will be the year. Thanks for the reminder!

    Praying for you all as you work at the college. I'm sure the Lord is going to use you in an amazing way in the lives of many students who need Him. What they see in you and your family just might be the only glimpse of Him they will have the opportunity to see. Shine brightly for His glory!

  27. my favorite jam or jelly is boysenberry but plum sounds very goo yummy too. I left a comment on your fb too, I feel for you every time you talk about going to work. I had to work for 10 years when my kids were still in the growing up stage and I just hated being away from them. So, at least you can be glad in that one fact that your kids are with you and are old enough too. you are blessed!!

    I'd have to choose two favorites. Tomato jam, and pumpkin butter. The tomato jam is over the top when served with tomato spice bread. It's so delicious.

  34. I like Raspberry best of all! I've made some mixing it with wild plums or pineapple juice...that one was yummy! I'm hoping to make a plum chutney this year...never had chutney before but someone mentioned having it on a turkey sandwich..it sounded wonderful.

  36. My favorite is Orange Marmelade! Mixed with pure maple syrup is a bit of Heaven! Your plum jam sounds delicious. It seems like Summer has flown by. I can't believe everybody is back in school from college students to teachers and little kids, too. It's great living one day at a time with the Lord! Hugs to you, Sue

  37. I have two favorites Bosenberry and Orange Marmalade. But your plum jam sounds delish! I am sad with Nick so far from us but am praying and praying harder. I have a choke cherry tree out front. I wish my friend would come pick those cherries and make her jelly. My friend Lorna is canning peaches. I bought some at the grocery store from Palisades Colorado. I a pretty sure that I know what heaven smells like! Sigh! Those peaches were wonderful! :)

  39. happy anniversary linda! i love orange marmalade because it reminds me of our trips to Europe and only being served continental breakfasts of coffee & croissants with orange marmalade. the orange zest makes is refreshing! love your recipes! i can't imagine working with that much pizza dough!! can you share the recipe for a single pizza??!! school is starting everywhere so lots of folks are 'back in the swing of things'!!

  44. Happy anniversary! Well prior to this week, I would have said that plum jam was my absolute favorite - to eat and to make. But this week, I tried a local mixed fruit jam called "Traffic jam" (isn't that a great name?) and I believe it is now my very favorite of all! Thanks for the lemon recipe!
