Gluten Free Pizza Crust Recipe!

Hello sweet ladies, 

praying your SONday will be a blessed one.

Last night our kids all had a surprise birthday party for my sweet man!!!! They also invited friends of our family.....it was a very sweet evening out at the refuge cabin. The weather was beautiful and warmer then it has been in the last months!!!!! That was a blessing.

We spent Valentines Day with some our grands. This is what I did.





Our grand daughter Ellie is eating gluten free. When she came out last night, she wanted to try a new gluten free recipe for the pizza crust. Here is the recipe. She brought her cookbook called Easy Gluten-Free Baking to try out one of the recipes. We decided on this one. One of you ladies from my fb asked for the recipe....thought it would be easier to put it up here. Enjoy!!!



Thin-Crust Pizza

1 1/2 cups brown rice flour
1 1/2 cups white rice flour, plus more for dusting
1/3 cup potato starch
1/3 cup cornstarch
3 tablespoons xanthan gum
1 1/2 teaspoons salt
Wet Ingredients 
1/4 cup olive oil, plus more for pan
1 large egg
2 1/4 cups warm water (110 degree F)
1 packet (2 1/4 teaspoons)
1. In a medium blow, whisk together dry ingredients 
2. In a small bowl, combine wet ingredients.
3. Add wet ingredients to dry ingredients. Using a stand mixer, mix dough on low speed for 1 minute. Turn mixer to medium-high and mix. Turn mixer to medium-high and mix dough for 8 minutes; scrape down the sides of the bowl at least once during the mixing.
4. Lightly oil a 12?18 inch cookie sheet. On a lightly rice-floured surface, roll dough out into a large rectangle. transfer dough to the cookie sheet. Press dough to fit the pan. Lightly spray a piece of plastic wrap with cooking spray and cover the pan lightly with plastic wrap. Allow dough to rise for 45 minutes in a warm, draft free environment. 
5. At least 15 minutes before dough has finished rising, preheat oven to 425 degrees.
6. Remove plastic wrap from pan and bake dough, without topping, for 12 to 15 minutes.
7. Remove crust from the oven and immediately top with desired toppings. 
8. Return pizza to oven and bake until cheese melts and is golden brown. Allow pizza to cool 3 to 5 minutes.

We shaped our pizza into a heart shape for Valentine's Day, don't you think it turned out sweet? 

Today after church the weather will be beautiful......you will find me in the chicken house......cleaning it. It will be a restful day here on the farm......much needed after busy weeks with ice and snow. Always makes chores a little on the hectic side! 

There has been some exciting things going on in our lives lately. We would appreciate prayer please. We can hardly wait to tell you all what is happening!!!!!!! Thank you to all who have prayed for our family for years.....God has heard them......and is answering big time!

  1. linda, a few years back you and I attempted a clean our house drive. I finally did it. I cleaned my house out of years of junk and I have it condensed to about 30 boxes left and I promise I will go through them. if it wasn't for my sisters help I may never had completed it. thank God for sisters!

  2. We are doing fine. Last week it was snowing. This week we're getting wind and lots of rain, with swollen rivers and creeks. Had a fun birthday on Friday and out with husband. We went to Bob's Red Mill in Milwaukie, OR. Toured their facilities where they grind wheat and make flour and mixes. They make gluten free mixes as well. I bought a couple to try and some brown rice flour. You can find their products in grocery stores all over the country. It We ate lunch at their store, restaurant and bakery. Good day and have a good week. It's time for me to eat our spaghetti lunch! Bye!

  4. Snow, snow and more snow here. And maybe more this afternoon. It is very pretty, but I hate driving in it. Need to pray my way through and use wisdom, as my tires are not good. And I do need to go to my dad's today to do some things.

    Life has been very, very busy with grandkids here a lot (snow days) and eldercare responsibilities. I get very tired. Not a lot of other exciting stuff going on, although I have tried a few new recipes lately and some of them have been real hits either with the family or at the weekly church potluck.

  7. Preparing to watch Nick run at Nationals in NYC! I am getting excited. Jeremy and Hannah secured the hotel we need today! A windfall paid for four airfares! God has been good. I should try this recipe. My hubby use to make wonderful homemade pizza. Sigh! Sounds like you have had too much fun! I love it!
