Another Review.....Chicken Tortilla Soup Recipe!

Hello sweet ladies........hope all is well at your home! Things are good here. Cleaned out the Milk House....... the weather was wonderful tonight. You can't believe how beautiful the sky was. I ran out to take a pic and this is exactly what the sky looked like. I love what the Lord does at night here on the farm! I am so blessed! Know you probably are where you live also!

This last Sunday we had a house full of college kids and family after church. The girls and I were wanting to make up soup to serve. I looked in the Gooseberry Patch Weeknight Dinners and there was a Chicken Tortilla Soup! Perfect to try out on our friends and family!!!!!! We also thought we would have Chili to go with. Guess what soup won? It was wonderful! The Chicken Tortilla Soup!!!!!! One of the boys from the college had 5 bowls full! I am not kidding. It was so funny because he would say, "do you mind if I have another bowl full"? He really liked it!

Talk about a "wow soup? I've often made this slow-cooker soup for easy weeknight meals and tailgating parties too. The compliments are sky-high, even though it's the easiest meal to prepare.

Chicken Tortilla Soup
4 boneless, skinless chicken breasts
2 15-oz. cans Mexican-style stewed tomatoes
4-oz. can chopped green chiles
2 15 oz. cans black beans
15-. can tomato sauce
1 c. salsa
tortilla chips
Garnish: shredded Cheddar cheese

Place chicken in a slow cooker. In a bowl, mix undrained tomatoes, chiles and beans. Stir in sauce and salsa; spoon over chicken. Cover and cook on low setting for 8 hours. Just before serving, remove chicken and cut into bite-sized pieces; stir back into mixture in slow cooker. To serve, line soup bowls with tortilla ships. Ladle soup over chips and top with cheese. Serve 6 to 8.

We served cornbread muffins with the soups and sour cream for the top.

If you try this recipe, let us know what you think!

As I said I worked in the Milk House tonight taking 3 wheelbarrows full of straw to the garden. We will work it in come spring........will be great for the plants! I was having problems with the girls scratching out the straw so I worked on the nester and laid new straw down for all the Cochins.

Sweet Pea immediately got all snuggled in to lay her egg.

Isn't this the cutest? Pinned it on my Chicken Coop Pinterest.

Enjoy your day......I will be in the pizza station using the Weeknight Dinner Cookbook. Pesto Chicken Pizza! I will share the recipe and tell you how the kids liked!

Hugs and God Bless!!!!!!!!!

  1. Just wondering do you drain the black beans first or through it all in?

  2. Oh, this recipe sounds so good! I'm sure since you had company..(with such great appetites...😉) you didn't have leftovers...but if you did, could this be froze? We love to do that for days when we just don't feel like cooking!

Enjoy your day...ours is dangerously cold!

    Blessings,

  3. Oh this sounds delicious! I may have to improvise on some of the ingredients - never seen black beans in tins or other wise, and will have to use regular canned chopped tomatoes.
My kids will just love having tortilla chips in their soup bowls.
    You sunsets are just amazing!!
Nothing much going on here, just my little guy home with chicken pox - lots and lots of spots!!
