All In An Evening.........


Hellooooooo, What a fun evening we had. Bucking bales........giggly girls..........working hard........Momma driving truck...........sometimes to hard on the brakes......Mr. Honey and girls getting all the bales..........daughter running after little country mouse..........caught him or a her.........enjoyed watching him go to sleep..........probably scared it half to death..........rain is coming Thursday ........had to get them all picked up......tonight......finished at 8:00. Stood out in the field.......prayed together and thanked the Lord for His provisions. He is so good to us.........isn't He? The moon was beautiful. Wish I could take pictures so you can see.......maybe you saw the same thing. Drove up into the yard...........skunk..........to late! Couldn't find him. They are not good to chickens.


Thought you would like to see the Little Country Mouse.........I have always liked little mice.....the ones that live outside! Don't like them to share my house! Even if they try they don't get to stay here!


Told you I would get you the recipe for the Homemade Twix Bars. Tressa found this recipe on line. I had people coming back today saying............"Do you have any more of those Homemade Twix Bars? They loved them. So will you!


The other recipe I said I would write down was Lemon Dreams.........these are soooo Nummy!

Lemon Dreams
2 cups four
1 1/2 tea. baking powder
1/2 baking soda
1/2 tea. salt
3/4 cup butter, softened
1 1/2 cups sugar
3 eggs
1 cup buttermilk
2 tea. finely shredded lemon peel.
Lemon Cream Frosting
1 cup lemon curd (recipe found here)

1. Preheat oven to 350 degrees. Line twenty to twenty-four 2 1/2 inch muffin cups with paper bake cups or lightly coat with nonstick spray for baking; set aside. In a bowl, stir together flour, baking powder, baking soda, and salt; set aside.
2. In a mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Gradually add sugar, beating until combined . Add eggs one at a time, beating well after each addition. Alternately add flour mixture and buttermilk to butter mixture, beating on low speed after each addition just until combined. Stir in lemon peel. Spoon batter into the prepared muffin cups, filling each about 2/3 full.
3. Bake for 15 to 18 minutes or until a tooth pick inserted near the centers comes out clean. Cool in pans on wire racks for 5 minutes. Remove cupcakes from pans cool completely on wire racks.
4. Prepare Lemon Cream Frosting; set aside. Spoon lemon curd into a decorated bag fitted with a lard round or open star tip. Push tip into the top of each cupcake and force some of the lemon curd inside cake. Generously pipe or spread the frosting onto tops of cupcakes. If desired, cut lemon slices into quarters and place on top of cupcakes. Store in the refrigerator. Makes 20 t0 24 cupcakes.

Lemon Cream Frosting: In a mixing bowl, combine 5 ounces softened cream cheese, 1/3 cup softened butter, and 1/4 cup lemon curd. Beat with an electric mixer on med. to high speed until smooth. Gradually add 3 cups powdered sugar, beating well. Beat in 1 T. milk. Gradually beat in 3 cups more of powdered sugar and milk to get you spreading consistency.

This recipe was found in the new magazine I showed you called foodgifts. I found mine at WalMart and another at Lowes. I could not find anything on the internet to buy it there. It is so jammed packed with wonderful recipes and cute ways to make as gifts. It is a must have!!!!!!! I made the Lemon Dreams for the kids at the college. They were a hit! The little cake is really moist the lemon curd on the inside is wonderful and you will like the frosting if you like things lemony!

  4. Regina........no and we didn't get the skunk. He will be back. We bring home the scraps for the college cafeteria for our animals. Sometimes we have a lot of it. It also attracts other varmints! Oh I hope your momma comes over! Would love to meet her!
