One More Day!

Hello..........I have only one more day of working at the college and then I am home!!!!!!!!!! Oh my am I one happy lady! HOME...for ........3 weeks.........just plain wonderful is all I can say!

Had to be gone this evening again..........no pictures. I do have some.....just no time to put them up. Have a wonderful day! So many of you have snow...........wonderful for you!

I have some very good news to tell you.........it is a for SURE that Vitaliy (the orphan boy) from the Ukraine is coming to our Son's families home for the holidays. Please pray for his safety flying and for all the details in just getting him here to America. He also does not speak English........ I tried to brush up on my Ukrainian (never spoke it before) and it was almost impossible!!!! Tried following the youtube teachers..........heehee........didn't sound so good. Hope he can teach us some words. I bet all the grandchildren and he will do just fine! We all want to be a blessing to him and praying that he will want to know our Heavenly Father. Our grandson is so excited to have him come.........it will be a very very special CHRISTmas for all of us. Thank you for keeping him and the Stubbie family in your prayers. I so appreciate you all. We have never done anything like this before. Scripture is clear to take care of the orphan. Here we go!

I also have so many fun things planned for when I am home. It will be so wonderful! I will probably will have to have a party!!!! Don't cha think?

Hello Sweet Friends,

Hello sweet ladies!

Tonight I was working in the kitchen.........I felt like someone was looking at me. There was..........it was him..........Mr. Snowman.......peeking at me as he is all nestled in my sugar jar.......I got the giggles. Thought you might need a smile!!!!

I think he is telling me it is time to do some major cooking.....we will be off for 3 weeks........I think I can handle it!

We are going to two of our grandchildren's CHRISTmas program..........can't wait.......it is that time of year! Hope all is well!

Does anyone that follows me have snow yet? I want snow so bad!

Hello to the Sweetest Ladies in the "World"

The other night I had two Christmas programs two grandsons.........one started at 6 over at 6:30 the other's started at 7 a half an hour away..........we made it. We were blessed this year to hear them singing about the real reason of CHRISTmas......it was sweet. Anyway we got home late and before going to bed.......... I thought I would check my blog and see if there were any comments. There was ONE............your know the kind........where they have laid their heart in the lines. I read..........and the tears started streaming. So many times a simple post can touch a heart...........it is when you get those personal sent comments or emails that tell you really see what is going on in their life.......I love it when I get them...........whatever the reason....... my new friend wrote this on my post in the comments. She has a precious message for all of us. This is what she wrote........some of you have already read it........but it is worth reading again. You will see the hand of God has worked in her life in a huge way. Forgiveness............it is a must.........or we stay in our own prison. I know..........I have been there.........now I have been set free............and continue to be set free and HE continues to reveals to me my sin........Do you have the same story ...........in your life? If not.....you are so blessed. This is what she said.

"Oh Linda what a great job you and the all the girls did on the cookie cookbook. Thanks all so much the ginger cookie is just what I wanted for so long and the one with cornflakes, who knew there was such a thing , I can't wait to try those. All of them look so good but where do I start baking hmmm? Special thanks for your work you did it up so cute. FYI because of you and your blog I have reconnected with my sister. We hadn't spoken for many years. I called her one day after reading you in your blog. It was only a couple weeks ago. Since then we have had lunch one day and today we spent the whole day together . We were alone and each got our Christmas cards and address books. We sat at her diningroom table addressing our cards, drinking coffee and talking about funny Christmas memories. Neither of us are in good health, so I am grateful we didn't wait till it was to late to reconnect. I'm sure we will be baking cookies together this holiday season as we both love baking so thanks for this cookbook and for just being you. You were my angel this Christmas. I am so happy to have my sister back in my life in time the holidays when so many years I felt alone and sad at Christmas. That is just a horrible feeling. My Surprise And Mozzarella Cheese Tutorial!


Hello Sweet Ladies...........it is Saturday an I am loving it to the max!!!!!!!!! I have so much that I want to share with.

God's design is incredible!

Here is my surprise. I will tell you up front that we are going through all the proper channels to get this Momma Canadian Goose to her proper place. It is a federal offense and we don't want to do anything wrong, but we don't want her to die. She was found running in traffic on a 4 lane highway. We have called the Dept. of Parks and Wildlife. They have given us a phone number for a Ranger to see what he wants to do with her and where he wants to transport her from here. Her wing has been hurt real bad. We are feeding her so she won't die....... until they get a hold of us. The reason that my son thought it would remind me of my childhood was when I was growing up in Alaska.... my father found an abandoned nest when I was little with 6 Canadian Geese eggs. I am not sure if this was illegal up there then, but he incubated them. They followed him everywhere he went after they hatched. It has been a wonderful memory. Anyway it was after hours when I finally got the Ranger's number................I left him a message on his phone to call me. I am waiting. Just thought you would like to see her before she leaves our farm. I tried to get a permit to keep her and help her get mended........it only takes 100 hours to do that. Not going to happen in my schedule!!!!! Smile. Isn't she so pretty! When you step out our back door there are hundreds of geese migrating now and they are honking in the skies. We have a low place on our farm where all the Canadians and Snow geese come. It is a beautiful site! I am so grateful to the Lord that He has let me live on a farm or homesteaded most of my life.

It is such a super easy pattern .......even for a new beginner. I am taking 20% from your orders and putting it towards bringing Vitaliy to America from the Ukrain.........we are so excited to make his CHRISTmas a special one. Now you are a part of it!

Remember I told you I learned how to make Mozzerella at work? Well here are a few pictures. I didn't get pictures of the whole process, (sorry)....... but here are a few pictures and some info on where to buy the things you will need.

If you go to the internet and put in "making mozzarella cheese" you will find lots of videos and lots of different cheeses to make in your home. I found this VIDEO on the internet to make an easy cheese using yogurt and salt. I am going to try this one when I am on CHRISTmas break. I have an Amish/Mennonite friend Rosa.......who I am going to show me how to make fresh homemade yogurt. I will post about that later. I think I tried making it when I was a young wife. I remember it was very easy.......it will be fun to be with my friend though. It will be a special treat. I have to go down and decorate their little "tea room" for the CHRISTmas holidays. They love to entertain in it. I am thinking I will do an evening and surprise our bosses at work. Something to look forward to. It is such a special place for me to go. I used to get to visit them a lot.......but now that I am outside the home working.........I don't get to see them very often. I loved going and seeing Grandma Yoder though........ she is a very wise Christian woman. Anyway.............

Here is another video cheese that is called Farmer's Cheese using buttermilk and lemon juice. Excuse him for calling it sexy cheese (has nothing to do with cheese)........ but the video shows how to make it a fast and very easy way! For a gift take a small little basket..........place a square napkin of homespun fabric in the bottom...........tie ribbon and a tag on the handle......take some whole grain crackers...... place them into a clear cellophane that has been tied with twine, ripped homespun fabric or a ribbon around the top. I think I would put the cheese in one of my little mason jars with olive oil and cracked pepper on the top......put on the lid. Tie something around the lip of the jar and a tag with the kind of cheese written on it. You could also wrap the cheese in cheese cloth and place it into a cellophane bag. Cute idea and very inexpensive gift for that hard to buy person.

Here is another VIDEO showing you how we made it at work. The lady in the video stretched the mozzerella a different way than Chef Quintin taught me, but same principle. He had me hold the clump of cheese in my hand and gently fold the cheese under to make a ball over and over with my hands pressing it until it had a shiny sheen to it. It is so pretty when you watch this happen. The way we made the mozzerella at work was with milk curd already made up ( I tried to find some, if anyone knows where to buy it please let us know). He used kosher salt and cayenne pepper and mixed it into the curds. He added the hot water.......and let it set until it was soft.

Here is a picture with me folding the sides under over and over again until it shinned!


After it was shiny...we placed it into a pan with ice, water to cover the top of the ice and a 1/2 cup of olive oil to have the cheese rest in. Put the lid on top and place it in the refrigerator. The next day Chef Eric made lasagna..using the freshly made mozzarella.........the kids loved it. The one thing I appreciate about the college kitchen is all the fresh food that is prepared from scratch. They are blessed kids!

If you are serious about making cheese you can buy a kit.....here........MOZZARELLA KITS, it has everything you need for $24. 95. It is a fun project to do.....if you have children teach them how to do it..........it is not hard and they will love your for it when they get to eat it!

Interesting Day at Work!


Hello.............
Today we had such a fun time at work. The Head Chef gave me a teaching session on how to make mozzarella cheese. It was different from the first time my friend Gail and I made it. When we made it we used 2 % milk and rennet. I loved the flavor then and today what we made was no exception. Today we made it with curds. It was sooo easy. Have you ever made mozzarella before? I will show you the pictures tomorrow.

I had two programs to go to tonight. Two different grandsons.........two different schools had CHRISTmas programs. Need I say more? Tired!

Just had to drop in and say hello though. Can't wait for the weekend! Are you doing anything special. Our family will be putting up the tree. Can't wait to have some time to decorate.

Oh I also have a surprise to show you......tomorrow....my son said tonight........."When you get home look in the duck pen............it will remind you of when you were young in Alaska"........I couldn't even think...........I want to take a picture first.....then you can see. It is totally neat (cool)!!!! I think you will like.......a lot. It is late and dark outside now........ so the pic wouldn't turn out very well. I loved it. My son knows his Momma well. Until tomorrow!

An orphan boy from the Ukraine


Hello sweet ladies..........

This is so new for our family. We do not know this little boy.........but he is growing in our hearts. It must be the Lord.........but He is just like that. He says in James 1:27. "Religion that God our Father accepts as pure and faultless is this: to look after ORPHANS and widows in their distress......"


Isn't he adorable? It is amazing........ how much Vitaliy looks looks like our grandson. Pray that they would know what the Lord wants them to do about a possible adoption. We are all asking the Lord to make it clear.

Sometime back I wrote about this little guy coming to America from the Ukraine to stay with our Son's family for a month over the Christmas Season. He is coming to see America and hopefully to be adopted. This organization has adopted out lots of children. I asked for prayer some time back and some of you wrote who were interested in doing something. I lost track.....of the emails...........my internet has been such a bother. Today I baked from the Prairie Flower Farm CHRISTmas Cookie Cookbook. I forgot to get a picture. I will tomorrow. I made the Merry Berry Cheese Bars entered by Connie Johnson. We had a lot of fresh cranberries at the college kitchen..... sooooooo I thought we would try and make our own cranberry sauce for the recipe. It was so easy, water, sugar and cooked with chopped cranberries. I will take a pic on Thursday of the bars/. They are so delicious. I am really going to have fun with the cookbook! Please let me know if you try something! I am so excited!

I can't believe the response on the Prairie Flower Farm CHRISTmas CookieCookbook. The comments have just blessed my heart big time. I love all the sweetness you ladies express. I think we all will have plenty of recipes for the CHRISTmas Season!

I have just found out last night that I missed some recipes........I have asked that they please send them to me again. I looked in my emails and couldn't find them.
