Another Recipe From The CHRISTmas Table!

This morning I made another recipe from the 


Gooseberry Patch Cookbook (buy here if you would like)
called,

The CHRISTmas Table 


I looked through the cookbook for a recipe and saw this one I thought would work for the breakfast I am having for some sweet little girls and their Grandma and Aunt.....next week. 

It is easy and very good!

Strawberry & Raspberry Strata

4 eggs, beaten
1/2 c. low-fat ricotta cheese
3 T sugar
1 c. milk
1/4 c. orange juice
1/2 c. honey
4 slices bread, torn into 
    1-inch pieces
1/2 c. frozen raspberries, thawed and drained(I used fresh)
1/2 c. frozen strawberries, thawed and drained (I used fresh)

In a large bowl, combine eggs, ricotta cheese and sugar. Stir in milk, orange juice, honey and bread. Stir to combine. Gently fold in berries. Transfer to a lightly greased 2- quart casserole dish. Cover with plastic wrap; refrigerate at least 2 hours to overnight. Remove plastic wrap; bake, covered, at 350 degrees for 40 minutes, or until golden on top and cooked through. Let stand 5 minutes before serving. Spoon into dishes to serve. Serves 4. 

If I would have had some cream on hand, I would have whipped up some fresh whipping cream for the top. 

All the way through a Gooseberry Patch Cookbook at the bottom are these wonderful ideas that you can use in your everyday cooking or crafting. The illustrations are beautiful!


Isn't this the neatest idea? I think this would be perfect, if you took individual salads,put them in large mouth pint size mason jars and have them for a picnic. Just put the salad dressing in the bottom and salad on top, put in fridge before leaving to make sure it is nice and cold. Place in a cooler....when you are ready to go on your picnic.


Found this recipe, that will be a must. I have been growing sweet potato slips. It is time to get them in the garden. This recipe will be wonderful to make up when we dig the sweet potatoes up this fall!
