Some More Recipes from Meals In Minutes

Hello sweet ladies,

We are getting more and more rain on the crops........it is such a blessing! The wheat is growing beautifully all around us! Our son's have fields next to where we live with wheat planted......they are pleased! Asking the Lord's protection from a late frost! That would be devastating for our farmers. 


I have three more RECIPES.........for you from the 

Meals in Minutes 
Gooseberry Patch Cookbook

Taco Salad
1 lb. ground beef
15 oz. can kidney beans, drained and rinsed
1 head iceberg lettuce, torn
1 onion, chopped
4 tomatoes, chopped
2 c. tortilla chips, crushed
1 1/2 c. shredded Cheddar cheese
In a skillet over medium heat, brown beef until no longer pink; drain. Add beans and cook until warmed through about 10 minutes. Refrigerate  beef mixture until chilled. Add remaining ingredients to a large serving bowl; add beef mixture. Pour Southwestern Dressings on top; toss gently. Serve immediately. Serves 8 to 10. 

Southwestern Dressings:
1 c. mayonaise
1 T. catsup
8 oz jar taco sauce
Whisk ingredients together.

and 

Southwest Salad
Twist
1 c. frozen corn, thawed
15 oz. can black beans, drained and rinsed
3 to 4 tomatoes, finely chopped
1/4 c. green onions, chopped
1/4 c. fresh cilantro, chopped (opt.)
1 T. chopped green chiles
juice of 1 to 2 limes

We ate this with corn chips, like a chunky salsa. 

Our dinner tonight was very nummy!
We will have this again......and again........and again!!!!

UPDATE from SHERRY!

When I was serving today, a young lady came up and by her countenance I could tell she wasn't doing well. This is when I am thankful I am there to love on the kids. I asked if she was okay and she said no. Her family was from Dallas. If you don't know.... Dallas had a tornado that really did some horrible damage. The young lady  said her families home had a tree that fell over and went landed through the middle of their house. Her grandparents house was gone. Praising God.... everyone was safe though. In fact I heard that there was not one death. That was amazing. I asked her if she knew where Lewisville was. That is where Sherry lives close to. The Sherry we are praying for. For some of you who remember Purses for Joplin, that is her). When I got home I called to see how Sherry was doing. First of all the med's that she was asking prayer for........she usually gets very ill..........notta happening! She is doing very well in fact. Also, when she got to the hospital, they tried to get her IV in 7 different times. It kept coming out, weird. After they finally got the IV in for the 7th time the sirens went off and they had to delay having her surgery. God protected she and her husband. The tornado was not far from the hospital. How wonderful we were praying.  Precious God!!!!!!!! The other thing Sherry shared with, was usually she is very very weak.........she is not WEAK. Isn't that wonderful?  She also wanted me to tell you all thank you sooooo sooo much. She appreciates each of you! Her sweet man could use some prayer.......heehee......he is the cook.....maid.....helper!!!!!!!! His name is Jim. Thank you sweet ladies........you are the sweetest for being such prayer warriors!!!!!!!!!

  1. Prayers for Sherry and all Prairie Farm followers. Also thank you and the Lord for the precious prayers for my lil sis Carla. She will be undergoing a double masectomy mid May.When it gets closer I will let you all know and ask for more prayers. Thank you Linda for the sweet post request. This surgery hasn't even sunk in and is hard for her to digest.She lost her 20yr old son last Oct.to a drug overdose.No one would have ever known he needed help.We are powerless at times with the exception of prayer,faith and the good Lord at our sides.Certain spots in the week I feel such hurt for Carla.

    Linda, so glad Sherry is doing okay! IV needles can be so awful! I have to remember to drink lots of water when I go in for blood tests! So So glad they are giving her meds that don't make her sick! I always hate that! Meds are sometimes worse than the pain they are supposed to help!
    God is so in control of our lives!
    So sorry about the girls grandparents home and her parents home, glad they are all okay though. Blessings go out to all in the path of that storm. Haven't heard from my cousins in Dallas, but I don't think it hit there.

  3. Can't wait to try the recipes. Will be praying for Jim. I am sure he will do well as chief bottle washer and homemaker. Prayer really does work. Praise God there were no deaths from the tornado, at least none that I have heard of. Continued prayers for those who were affected and those in need of healing.
